- 600g of potatoes like Monalisa
- 100g of arugula
- 200g of fresh goat cheese
- 1 red onion
- 4cl of olive oil Bouteillan
- Flowers of choice to decorate (for example pink garlic flowers)

Preparation
Step #1
Start by washing your potatoes. Steam them for 20 to 30 minutes depending on their size. Check the cooking by inserting the tip of your knife. They should not be overcooked or undercooked.

Let them cool completely in the fridge.
Step #3
For dressing, in a large dish, arrange the previously washed arugula, potatoes cut in 2 or 4 depending on their size, add the fresh goat cheese crumbled, red onions thinly sliced and drizzle with a generous drizzle of Bouteillan olive oil.
Decorate with some seasonal edible flowers.
