Ingredients
- 1 puff pastry
- 250 g cherry tomatoes
- 2 tablespoons of pomegranate molasses
- 2 tablespoons of honey
- 1 tablespoon of whole sugar
- 1 onion, finely chopped
- 1 drizzle of Les Centenaires olive oil
- 1 beautiful stracciatella of buffala
- Lemon thyme

Preparation
Step #1
Preheat your oven to 180°C (thermostat 6).
Step #2
Wash and cut your tomatoes in half. Chop the onion.
Step #3
In a large skillet, sauté the chopped onion with a drizzle of olive oil.
Once golden, add the cherry tomatoes, pomegranate molasses, sugar and honey.
Cook over low heat.
Step #4
Pour this tomato mixture into a pie pan.
Roll out the puff pastry on top, breaking the edges.
Prick the dough with a fork and bake in a hot oven at 180°C for 30 minutes.
Step #5
Unmold your pie by turning it on a plate.
Garnish with stracciatella, lemon thyme and a generous drizzle of olive oil before serving with a nice green salad.
