- 4 salmon fillets or steaks
- 1 bunch of fresh chives
- 1 juicy lime (or 1 lemon or 1 bergamot)
- 2 small white onions
- Coconut cream (or creme fraiche)
- Fleur de sel
- Pepper and pink pepper mix (mill)
- DOP Provence olive oil

Preparation
Step #1
Preheat your oven to 180°C - thermostat 6 (preferably in fan heat).
Step #2
Place your salmon fillets on baking paper squares.
Step #3
Cut 8 thin slices of lime (or bergamot or lemon) and arrange two slices on each salmon fillet.
Step #4
Drizzle each fillet with coconut cream. Chop the chives, finely cut the white onions and sprinkle over the salmon fillets. Salt with a pinch of fleur de sel and pepper with a mill turn, then add a few drops of olive oil on each fillet.
Step #5
Close the papillotes and bake for 20 minutes at 180°C (thermostat 6).
