  • Beef carpaccio: 4 plates
  • Pine nuts: 15 g
  • Pruned pistachios: 15 g
  • Hazelnuts: 15 g
  • Parmigiano Reggiano PDO
  • Fleur de sel
  • Pepper and pink pepper mix (mill)
  • Frantoïo olive oil

Preparation

Step #1

Fry the pine nuts, hazelnuts and pistachios in a spoon of olive oil until golden brown. Crush coarsely and let cool.

Step #2

Using a peeler, get beautiful shavings of parmesan.

Step #3

Arrange the beef carpaccio on the plates. Sprinkle with pieces of dried fruit, add some basil leaves and parmesan shavings, a pinch of fleur de sel and a turn of pepper mill.

Step #4

Pour a generous drizzle of Frantoïo olive oil on each plate before serving.
